(vegan)<div style="text-align: center;">I had this 2 <span class="Apple-style-span" style="color: #93c47d;">pears</span> on the counter that were too done (soft) to be eaten alone. I am very bad at using all the fruits that I buy at time. It is so tempting at the store, it smells good. it looks good, and I end up buying too much. But I hate throwing away food so I had to come up with an idea to use these very mature pears.</div><div style="text-align: center;"><br />
</div><div style="text-align: center;">The first thing I thought when I saw those pears, is to dip them into <span class="Apple-style-span" style="color: #93c47d;">chocolate</span> :) yummyyyyy.. but they were too soft :( I had to find an alternative !</div><div style="text-align: center;"><br />
</div><div style="text-align: center;">Why not make a pear cake and with the crumble of the cake make <span class="Apple-style-span" style="color: #93c47d;">truffles</span> ? perfect I will have the pear flavor and my chocolate craving satisfied :)</div><div style="text-align: center;"><br />
</div><div style="text-align: center;">Alternative found : <span class="Apple-style-span" style="color: #93c47d;">Pear Cake Truffles</span> ...</div><div style="text-align: center;"><br />

</div><div class="separator" style="clear: both; text-align: center;">1/3 cup dairy-free butter (earth balance)</div><div class="separator" style="clear: both; text-align: center;">1/2 light brown sugar</div><div class="separator" style="clear: both; text-align: center;">1 1/2 tsp Ener-G egg replacer (mixed with 2 tbsp rice milk)</div><div class="separator" style="clear: both; text-align: center;">1/4 cup rice milk</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">2 pears </div><div class="separator" style="clear: both; text-align: center;">1 tsp cinnamon</div><div class="separator" style="clear: both; text-align: center;">3/4 tsp lemon juice</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">Preheat oven at 350 degrees.</div><div class="separator" style="clear: both; text-align: center;">In a bowl mix the flour, xanthan gum, baking soda, baking powder and salt together and set aside.</div><div class="separator" style="clear: both; text-align: center;">In the mixer , cream the butter for 1 minute. Then add the brown sugar and beat well.</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">In the mean time put the pears cut in pieces in a food processor with the lemon juice, pulse 6 times (it should be like a puree with mini pieces, but not too liquid). Add the cinnamon powder and fold into the pear puree with a spatula. Set aside.</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">The butter and sugar should be well combined by now :) add the egg replacer mixture and mix well. Then add the pear puree one spoon at a time.</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">Alternatively add the flour mix and the rice milk. The batter will become smooth when ready.</div><div class="separator" style="clear: both; text-align: center;">Pour the batter in a "greased" loaf pan , smooth the surface with a spatula.</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">After 35 min, insert a knife in the cake , if it comes out clean, it is ready, otherwise bake for 5 more minutes and check again.</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;">When ready, transfer the cake on a cooling rack. Let it cool completely.</div><div class="separator" style="clear: both; text-align: center;"><br />

This place is really nice, it is a traditional Italian shop ( Deli meets, cheeses, of course pastas,...). However in the middle of the store you have a little restaurant with only Italian food on the menu ! It is always delicious and the portions are really well done, not too much or not enough, just right !</div><div style="text-align: center;"><br />
</div><div style="text-align: center;">The other night there, I stopped at their <span class="Apple-style-span" style="color: #e06666;">Olive </span>stand, which is amazing with tons of varieties. This is how the <span class="Apple-style-span" style="color: #e06666;"><b>Olive</b> <b>Tapenade</b></span> recipe came in my mind. </div><div style="text-align: center;"><br />
</div><div style="text-align: center;"><span class="Apple-style-span" style="line-height: 19px;"><span class="Apple-style-span" style="font-family: inherit;"><b><span class="Apple-style-span" style="color: #e06666;">Tapenade</span></b> (pronounced tap-en-AAD) is originally a <a href="http://en.wikipedia.org/wiki/Provence" style="background-attachment: initial; background-clip: initial; background-color: initial; background-image: none; background-origin: initial; text-decoration: none;" title="Provence"><span class="Apple-style-span" style="color: #bf9000;">Provençal</span></a> (South France). Its name comes from the <span class="Apple-style-span" style="color: black;">provençal </span>word for capers, <i>tapenas</i>. </div><div style="text-align: left;">The recipe is originally <span class="Apple-style-span" style="color: #e06666;">Allergy Free</span> (gluten-dairy-egg-soy-nut free), I decided to not go for the gluten free but keep the rest of allergy away :)</div><div style="text-align: left;"><br />
</div><div style="text-align: center;"><span class="Apple-style-span" style="color: #e06666;">I love this recipe because it is so easy to adapt it with any fruits you will find in your pantry !</span></div><div style="text-align: center;"><br />
</div><div style="text-align: left;">Beside being a delicious<span class="Apple-style-span" style="font-family: inherit;"> recipe, it is nice to remember that <span class="Apple-style-span" style="color: #a64d79;">blackberry</span> is an amazing fruit with tons of <span class="Apple-style-span" style="color: #e06666;">Health </span></span><span class="Apple-style-span" style="color: #e06666;">and Nutrition Benefit</span><span class="Apple-style-span" style="line-height: 17px;"><span class="Apple-style-span" style="color: #e06666;">s</span><span class="Apple-style-span" style="color: #414040;">. </span>Studies have shown that blackberries help t</span><span class="Apple-style-span" style="line-height: 17px;">he body to avoid various types of cancer, especially breast and cervical cancer. In this case let's not feel guilty and go for it !!!</span></div><div class="separator" style="clear: both; text-align: left;"><br />

First because it is <span class="Apple-style-span" style="color: #e06666;">Vegan </span>so my dairy & egg allergies will feel okay and second because it is <span class="Apple-style-span" style="color: #e06666;">Chocolate.</span><br />

</span><br />
<i>Make one 8inch Tart</i><br />
<i><b>Shortbread tart Crust</b></i><br />
1 1/2 cups all-purpose Flour 1/8 teaspoon salt<br />
1/4 cup powdered sugar 10 tablespoons vegetable shortening (dairy free)<br />
3/4 teaspoon xanthan gum 2 tablespoons orange juice<br />
<br />
<b>Preheat the oven to 350 degrees</b><br />
<b>1. </b>In a mixer, whisk together the flour, sugar,xanthan gum and salt.<br />
<br />
<b>2. </b>Add the shortening one tablespoon at a time , and mix for one minute (until coarse meal texture).<br />
<br />
<b>3.</b>Add the orange juice and mix until the dough forms a ball.<br />
<br />
<b>4.</b>Put the dough on a parchment paper and top with another sheet of parchment paper. With a rolling pin flat the dough big enough the fit your tart pan.(make it about 1 inch bigger to be able to fold the border).<br />
<br />
<b>5.</b>Remove the top sheet of parchment paper and flip the dough into the pan. Gently peel off the second paper.<br />
Press the dough down to the pan , trim the sides. Punch the bottom of the tart about 6 times with a fork.<br />
<br />
<b>6.</b>Bake the tart for 20 minutes, until lightly golden. Let cool completely before filling<br />
<br />
<br />
<b><i>Pudding Filling</i></b><br />
3/4 cup sugar 1 tablespoon Ener-G egg replacer<br />
1/3 cup cornstarch 2oz. baking chocolate<br />
1/2 teaspoon salt 1/2 teaspoon vanilla extract<br />
2 1/2 cups rice milk<br />
<br />
<b>1.</b>In a saucepan ,whisk together sugar,cornstarch and salt. Add the rice milk and whisk until combined.<br />
Add the egg replacer, whisking until light and frothy.<br />
<br />
<b>2.</b>Set the saucepan over medium heat. Add the chocolate in pieces and whisk until it comes to a slow simmer and has thickened (about 5 minutes).<br />
<br />
<b>3.</b>Once it has thickened to a pudding consistency, reduce the heat to medium-low and cook just below a simmer,stirring for 20 minutes. The pudding will become darker. Once really thick , remove from the heat ,whisk in the vanilla and pour into the tart crust.<br />
<br />
<b>4.</b>Chill in the fridge for 3 hours.<br />
<br />

Now I have tons of things to catch up with ! :)</span></div><span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;">Before we moved in Austin we lived in Danbury,NH, hometown of my husband, Bryan. This is where everything began !</span><br />
<span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;">Back in 2099, Bryan's Mom (Audrey) was on a project to open a bakery. I was just arriving in the US and needed something to keep me busy so I just started to help her around and that's how everything started.</span><br />
<div style="text-align: center;"><span class="Apple-style-span" style="background-color: white; color: #e06666; font-family: Arial, Helvetica, sans-serif;"><b><br />
</b></span></div><div style="text-align: center;"><span class="Apple-style-span" style="background-color: white; color: #e06666; font-family: Arial, Helvetica, sans-serif;"><b>THE CORNUCOPIA BAKERY</b></span></div><span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;"><br />
</span><br />
<span class="Apple-style-span" style="font-family: Arial, Helvetica, sans-serif;">After a year at this Bakery working together with Audrey, we decided to expand ! that's why we purchased a beautiful historical building and this coming May we will have a full time running <span class="Apple-style-span" style="color: #e06666;">Coffee Shop, Bakery and Catering Business</span>. Now I spend half the year there working and the rest of the year in Austin "relaxing" !</span><br />
